Apple Crisp

photoIt’s the time of year when apples are dropping from the trees – and with any luck you or a neighbour will be happy to share the glut! So an apple recipe is a must…

This delicious recipe comes from the very handy little Do Eat Raw app you can download from App Store – I recommend it! You can also store your recipes on it, add pics, and even plan your shopping list!

Ingredients:

  • 5 dessert apples
  • ½ cup raisins, soaked for 3 hours
  • Sweetener of choice (eg yacon syrup, coconut syrup, stevia)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon or piece of cinnamon stick
  • Pinch of celtic grey salt
  • 1 cup of pecans
  • 1/2 cup macadamias
  • 2/3 cup dates

Method

In a high speed blender, place one of the apples, along with the soaked raisins, cinnamon, vanilla, and salt and blend to a puree. Sweeten to taste with sweetener of choice.

Peel and thinly slice the remaining apples and place them in a bowl. Add the puree mix and toss gently till they are all coated.

Grind the pecans and macadamia nuts finely in the food processor, then add the dates and process until well mixed together.

Place the apples in a ceramic dish and top with the pecan mix. Warm through in the dehydrator or very low oven at 105F or 42C for 4-5 hours. Delicious!
